Clean: wash cucumbers with water & baking soda (optional) and peel or chop into smaller cubes.
Blend: Combine the peeled cucumbers, ginger, and water in a blender. Blend until the mixture is smooth.
Strain: Pour the blended mixture through a fine strainer to remove the pulp. Press with a spoon to extract as much juice as possible.
Flavor: Stir in the freshly squeezed lime or lemon juice(optional), and sweeten with brown sugar, honey or xylitol, adjusting to your preference.
Chill and Serve: Refrigerate for a couple of hours or serve immediately over ice. Garnish with cucumber slices or mint if desired.
