Prep the Carrots: wash and peel 1 lb of fresh carrots. Chop them into smaller pieces for easier blending.
Blend: In a blender, combine the chopped carrots with 4 cups of water. Blend until pureed.
Strain: pour the blended mixture through a fine mesh strainer or cheesecloth to remove the pulp. Press to extract all the juice.
Mix In the Goodness: In a large jug or bowl, stir in the evaporated milk, condensed milk (adjust to taste), sweetener of choice, vanilla extract, nutmeg, and optional ginger. Add rum if using.
Chill and Serve: Refrigerate until cold. Serve over ice for a refreshing Caribbean treat.
