Peels of 1 large pineapple (washed)

4-inch piece of fresh ginger, peeled and sliced

8 cups water

Juice of 2 limes (optional)

2-3 tbsp honey, brown sugar or xylitol (to taste)

Directions
Clean: wash & peel pineapple to remove skin
Boil: In a large pot, add pineapple peels and ginger slices to 8 cups of water. Bring to a boil, then simmer for 20-30 minutes.
Soak: Remove from heat, cover, and allow the mixture to steep overnight to absorb all the flavors.
Strain: The next day, strain the liquid to remove the solids.
Mix: Add lime juice(optional) and sweeten with honey or brown sugar or xylitol. Optionally, blend in some pineapple chunks for added texture.
Chill and Serve: Refrigerate the mixture and serve cold over ice. Add rum for a fun twist if desired.
