But tamarind isn’t just for drinks, it’s also used to make sauces, chutneys, marinades, jams, and more. Ingredients

2 cups tamarind pulp/or fruit in shell.

10 cups water

2 cinnamon sticks

10 whole cloves

Handful of grated ginger

Brown sugar (or preferred sweetener) to taste
Directions
Boil the spices: In a large pot, add 10 cups of water, cinnamon sticks, cloves, and grated ginger. Bring to a boil, then reduce the heat and let it simmer for 10 minutes to extract the flavors.
Add tamarind and steep: Turn off the heat. Add the tamarind pulp directly into the hot spiced water. Stir well to help it break down. Cover pot and Let it steep for 2–4 hours, or overnight. The tamarind will soften and release its tangy flavor into the spiced liquid.
Strain and sweeten: Once steeped, strain the mixture using a fine mesh strainer or cheesecloth to remove pulp, seeds, and spice bits. Add brown sugar or your preferred sweetener to taste.
Serve chilled or warm: Chill in the fridge and serve over ice, or warm gently on the stove for a cozy twist.
